Elaboration: The different varieties are fermented separately at a temperature of 28 ºC. Maceration is long, followed by the malolactic fermentation. Once this process is completed, the wine is aged in American oak barrels during 4-6 months. Afterwards, the ‘coupage’ and the bottling are carried out, and the wine continues the aging in bottle between 3 and 5 months more.
Characteristics: Dry complex red wine, but easy to dry at the same time. Smooth, with aromatic and fresh wood.
Recommendations: Drink at temperatures between 16 ºC and 18 ºC, up to 8-10 years after elaboration.
Grape varieties: 40% Grenache, 40% Carignan and 20% 'Ull de Llebre' (Tempranillo).
Type of soil: Meteorised primary granite.
Origin: 10 to 45 years old vines from the districts of Falset, Marçà, Masroig, Capçanes, Els Guiamets and Margalef.
Alcohol content: Between 13% and 14% by vol.
Pairing: An easy to drink wine but also smooth, fresh and very versatile. It combines well with all types of food, and it is recommended with white meats, salads, goat’s cheeses, soups, sausages and wild mushrooms. Also rice dishes with all kinds of accompaniment.
Among the various cooking methods we can single out grilling, steaming and boiling: in general, simple and light dishes. Also suitable for all types of raw food.
