Elaboration: The grape varieties have the fermentation separately in a controlled temperature between 26ºC and 28ºC. The maceration is long, and lasts approximately 24 days. Afterwards, the malolactic fermentation is carried out, to end with the blend for the barrels. The wine will age for approximately 14 months in French oak barrels in a controlled temperature (16ºC). Once the aging has finished, we end up with the final coupage for the next step, bottling. 

Characteristics: Red and garnet wine, with violet reflexes. Dry and complex, with a combination of black fruit comfiture and cocoa and black pepper notes.

Recommendations: Drink at temperatures between 12ºC and 16ºC, and up to 15 years after elaboration. 

Quantity

Grape varieties: 60% Cabernet Sauvignon, Merlot and Syrah; 40% Grenache and Carignan.

Type of soil: “Llicorella” (Slate from the carboniferous period). Origin: Young and old vines from altitudes (+500 meters).

Alcohol content: Between 13,5% and 15%.

Pairing: Wine with a sweet entrance in the mouth that develops into fruity notes to the center of the mouth, where we also find an important tannic consistence. It is a full-bodied wine, with a long and persistent after taste.

It combines with game meat, duck, high protein dishes, and also with sweet and sour dishes. Good for using it in stews and winter dishes.
